No Crust Quiche

You can skip the crust and save some carbs on this easy, inexpensive quiche.

8 eggs

One package frozen spinach thawed and drained

Small finely chopped onion

1/2 cup milk

2 Tbs melted butter

1/2 cup shredded Swiss cheese

2 slices cooked bacon (or turkey bacon), crumbled

1/4 cup Parmesan cheese

1/2 tsp salt & pepper

Cooking spray

Preheat oven to 350. Mix all ingredients thoroughly in a large bowl. Spray sides and bottom of baking pan and pour in mixture. Sprinkle some extra cheese on top if you like. Bake at 350 for 45 minutes. Let sit 5 minutes before serving.
